Wine and grilling seafood.

Rules are made to be broken, rigid rules especially, like white wine with fish, red wine with meat. In the last few years, wine lovers have started looking wider for great seafood wines, and there's a better rule of thumb: white wine with white seafood, pink wine with pink seafood, and red wine with red seafood.

Fresh summery white wines are a traditional combination with light white fish and shellfish, and that's fine, because it works great. Red wines are great with grilled food in general, and they are perfect with grilled white fish too, especially meaty swordfish and monkfish.

Here's a selection of readily available wines that really understand seafood and the grill.

White wines:

Lurton Pinot Gris (about $6): This one is very bright and lean with lots of green tart fruit, and a bargain at $6. Great with a grilled sea bass or ocean catfish.

Picpoul de Pinet (about $6): "Picpoul" means "pucker up," and you'll know where the name came from as soon as you taste it. Smells like eau-de-starfruit, tastes like guava-pineapple-lemon-lime with high zippy acidity.

Coppola Bianco (about $9): This is a fun wine, a delicious blend of who-knows-what white grapes from California. Not sweet, but so much fruit it almost tastes sweet, rich and aromatic, and really good with a strong grilled white fish like red snapper.

St. Michael-Eppan Pinot Grigio (about $10): Italian whites are famous for being lean, but this wine from the extreme north delivers much more body and richness than any typical pinot grigio. Great with shishkabob of grilled shrimp, scallops, melon and apricot.

Murphy-Goode Fume Blanc (about $13): Deliciousness is job one for any winemaker, and this wine is an absolute crowd-pleaser that captures the vitality of sauvignon blanc in a California style best described as "yummy." Buttery, toasty oak flavors are everywhere, the fruit is ripe and full with a great citrus zing at the end, beloved by all.

Chateau Cruzeau (about $14): Another Lurton wine, this time a traditional sauvignon blanc from Bordeaux with great style. Somewhere in the mix it tastes slightly stony, like a sidewalk smells right after it rains. Should come with its own icy plate of oysters.

Pink wines:

Chateau Aqueria Tavel Rose (about $14): Chateau Aqueria is rich and creamy, full of flowers and red fruit flavors, perfect with grilled salmon.

Sanford Pinot Noir Vin Gris (about $15): You'd have to look twice to know this isn't a red wine, and you could still be wondering: extremely light red of extremely dark rose? Save it for meaty fish: tuna, swordfish and the like.

Red wines:.

Dr. Taurino Salice Salentino (about $10): Produced under the hot sun of southern Italy, it's no surprise this country blend is a great summer wine. Very food-friendly to everything from grilled shrimp and scallops to marinated seafood steaks.

Beringer "Founder's Reserve" Pinot Noir (about $12): Light, chillable reds are hard to come by.

Rosenblum Zinfandel (about $13): Zinfandel is America's best red wine, and the Rosenblum is a superb all-purpose, all-occasion specimen. The fruit is dense and dark with classic blackberry and raspberry flavors.

The Secret Wine Deal

5. Charles Shaw Wine

For the more daring of wine drinkers, there is Charles Shaw Wine, or more well known as “Two Buck Chuck". Charles Shaw wines currently include Cabernet Sauvignon, White Zinfandel, Merlot, Chardonnay, Sauvignon Blanc, Shiraz, Valdiguie in the style of Beaujolais nouveau, and limited quantities of Pinot Grigio. Now, I know many may be thinking of this as a bottom of the barrel brand, and that may be historically true, but the fact remains that for as cheap at these bottles of wine go one may be surprised at how often one gets a pretty decent tasting bottle.

4. 'The Other' Red Wine

One is immediately struck by the vibrant color of this wine. The aromas of blackberries and plums are complemented by spice, toasty oak and cedar notes. "Lots of dark fruit in this red blend from Lodi, California. 60% Cabernet, 30% Merlot and 10% Syrah. This will only run $17.

3. Baron Herzog Chardonnay 2008

This Chardonnay is crisp and refreshing, perfect for summer. Smooth textured yet lively on the palate, our Central Coast Chardonnay serves up a fine array of apple, pear and vanilla-like flavors. Pear, apple, and chamomile notes characterize this tangy, citrus-flavored Chard. Full-bodied, with bright acidity and long finish. Only $16.

2. 2009 Dante Reserve Pinot Noir Sonoma County

Always fans of the Dante Cabernet, we recently discovered the Pinot - 2009 is the first vintage - which offers a lot of bang for your buck as well as appealing raspberry, dark fruit, and cola flavors. The wines are named after Michael Pozzan's eldest son, Michael Dante Pozzan, and the Pozzans descend from a family winemaking history that began in Italy more than 150 years ago.

The addition of a small amount of Semillon adds some body and further complexity to this Sauvignon Blanc whose predominant flavors include grapefruit and citrus. Morgan Winery has been around since 1982 and consistency is one of their noted qualities. No exception here.

Adventures in Wine

Everybody has things that they want to do in their life. Whether it's something extreme like skydiving, or something simple like seeing a certain sight, we all have something that sparks our interests. Often great things do not have to be expensive, or even far away, especially if you are a wine love. There are many great wine experiences that one can have in California that are memorable, but won't break the bank.

Highway 29

This Getaway will take you up Highway 29 from Yountville, just past the town of St Helena. The five famous and historic wineries on this list represent wineries that have been instrumental in giving Napa Valley wines their worldwide recognition. You may want to plan a restaurant stop for lunch in St. Helena or at the northern end of the valley in the town of Calistoga. Whether you are from San Fran or Sacramento, these wineries are easily accessible.

Domaine Chandon

In the early 1970s, the great French Champagne house of Moet & Chandon made a decision to start making sparkling wine in California. They chose the Carneros and Mount Veeder regions of the Napa Valley as the ideal climate and soil to produce fine sparkling wines made in the French tradition. The name Domain Chandon was established and the winery produced its first vintage in 1976. Today Domain Chandon is world famous for its quality of fine California sparkling wines. The sparkling wines are not the only attraction to this famous and historic winery. The landscaped grounds and the architecture are spectacular. We recommend taking the tour, which is very informative and worth the time. To get to Chandon, turn off Highway 29 at the Yountville exit. Travel to the west and look for the winery on the right after you cross the railroad tracks.

Rubicon Estate

This is a magnificent winery made famous by the great Inglenook wines that were once produced here. Francis Ford Coppola, of “The Godfather” fame, purchased this winery in 1975. In 2006 the winery changed its focus along with its name. Early in 2006, Coppola changed the name from Niebaum-Coppola to Rubicon Estate. The emphasis now is on the production of very high-end wines made from their estate Napa Valley vineyards. Entrance to the winery is $25 per person which includes tasting, an optional tour, and valet parking. Production of the other Coppola wines will take place at their newly-acquired facility in the Alexander Valley in Sonoma County called Francis Ford Coppola Winery (formerly Chateau Souverain).

Hidden Wineries

Believe it or not, there are some hidden wineries in the Napa Valley. It is hard to escape the crowds when visiting the Napa Valley especially on weekends. These wineries of the Napa Valley are sure to be less touristy. Some of these wineries are open by appointment only but don't let that discourage you. They love to have visitors and will make you feel at home. There are several other hidden wineries in the Napa Valley but these are our favorites.

Elyse Winery

The Elyse Winery is on Hoffman Lane on the west side of Highway 29 as you near Yountville. If you are traveling north from Napa, you will probably miss Hoffman Lane. That's a good thing because it is a dangerous left turn to get to Hoffman and Elyse on the west side of Highway 29. For safety sake, we encourage visitors to forget the left turn and instead exit a mile ahead at the first Yountville exit. Turn under the freeway and get back on Highway 29 going south. Technically, the winery is open by appointment only but will take visitors just about any time between 10 and 5. The owners are Ray Coursen and his wife Nancy. Ray does the winemaking and makes delicious red wines. One of our favorites is the Nero Mista, a blend of red varietals that makes a very food friendly and balanced wine.

Summers Winery

Summers Winery is a small family-owned winery located at the very north end of the Napa Valley on Tubbs Lane. Summers has a very inviting picnic area that includes a Bocce Ball court. Two wines in particular standout at Summers Winery, the Charbono and the Petite Sirah. The Charbono grape used to be abundant in California but now there more than 100 acres of Charbono vineyards in California. This is a very food friendly red wine. The second wonderful wine is the Petite Sirah from Knights Valley. This is a big wine that is full of flavors.

Make sure the type of wine storage you choose is big enough to accommodate the amount of wine you own. But after that, choosing the right wine storage gets a bit tricky. So to make it easy, create a check list for each type of wine storage - wine racks, wine refrigerators, wine cabinets and wine cellars - to help you find the right one for you. First of all, if you purchase a bottle or two of wine to drink the same day or later that week, then storing is definitely not an issue. But when some great newly-acquired wines require longer storage, here are a few things to think about.

Take into consideration your budget and available space. It's not necessary to make the guestroom into a wine cellar. Many options exist, from simple wine racks that hold ten bottles to large cabinets that hold one hundred or more. Start small and work your way up.

As with all wine storage, proper temperature is essential. If it's too hot, the wine will suffer. In addition, keep the bottles away from direct sunlight or any unforeseen vibration, and be sure to lay them on their side. This will ensure a moist cork and the proper amount of oxygen seepage, which is vital to the aging process. If there is no convenient storage space, place both whites and reds in the refrigerator on their side rather than expose the wine to unwanted heat.

Remember, proper storage will assure excellent flavor and correct aging.

Wine storage is key to the success of any collection. If you enjoy collecting find wines then you will want to look into the best of all wine storage options. There are many different ways to store your wine but no matter which wine storage solution you choose you will need to keep the conditions constant.

You can use a wine cellar for your wine storage or you can have a special cooler. Wine racks are a necessary part of your wine storage. The wine racks can be made of metal or wood and the wine storage that you choose will be a matter of personal taste. Both of these sorts of racks are wonderful to look at but the metal racks tend to be more flamboyant and stylish while the wood racks are classic and traditional in style.

You may want to choose your racks in order to have them match the rest of your wine storage solution. The final choices that you make will be affected somewhat by whether or not you are planning to show off your wine cellar to your friends. If you are then your wine storage solutions will need to be a little more coordinated.

So look into the wine racks and other wine storage options that will all look well together. Your wine storage area can look like those of a professional wine collector. It is not hard to do but it can cost you a little money.

The Black Crowes: These guys are good

Croweology will be released on vinyl as well as CD on August 3rd via The Black Crowes' label Silver Arrow, via Megaforce Records, right in time for the first show on a newly announced leg of dates.

That show will be August 13th in Milwaukee, and follows up two months of various one-offs and festival appearances across the U.S. The Crowes will play in amphitheatres and theaters mainly, trekking all over the Midwest in August. They'll head south the next month, finding themselves in Dallas by the end of September. October finds them heading up northeast, with dates including a five-night stand in New York City at the end of the month and the beginning of November. The band will stay on the East Coast until a two-night hometown stay in Atlanta November 19th and 20th, before hitting the West Coast in early December (more dates may be added in between). The tour ends with The Black Crowes' annual multi-night San Francisco series, beginning December 12th and ending the 19th at The Fillmore.

The shape of wine bottles can communicate a great deal about the taste of the wine inside. In Europe, many wine producing areas developed unique wine bottle shapes that became the traditional bottle for wines of that region.

The Bordeaux bottle is also generally used for Sauvignon Blanc and Semillon.
These are the primary grape varieties allowed in the production of white wines in Bordeaux.

The slope shouldered 'Burgundy Bottle' is generally used for Chardonnay and Pinot Noir around the world. These are the two key grape varieties used in the Burgundy region of France for white and red wine production.
Wine producers in Portugal, Italy, Spain, France and Germany follow the tradition of their local areas in choosing the shape of bottle most appropriate for their wine.
Port, sherry, and Bordeaux varieties: straight-sided and high-shouldered with a pronounced punt. Port and sherry bottles may have a bulbous neck to collect any residue.
Burgundies and Rhône varieties: tall bottles with sloping shoulders and a smaller punt.
Rhine (also known as hock or hoch), Mosel, and Alsace varieties: narrow and tall with little or no punt.
Champagne and other sparkling wines: thick-walled and wide with a pronounced punt and sloping shoulders.
German wines from Franconia: the Bocksbeutel bottle.
The Chianti and some other Italian wines: the fiasco, a round-bottomed flask encased in a straw basket.
Many North and South American, South African, and Australasian wine producers select the bottle shape they wish to associate their wines with. For instance, a producer who believes his wine is similar to Burgundy may choose to bottle his wine in Burgundy-style bottles.
Other producers (both in and out of Europe) have chosen idiosyncratic bottle styles for marketing purposes. Pere-Anselme markets its Châteauneuf-du-Pape in bottles that appear half-melted. The Moselland company of Germany has a riesling with a bottle in the shape of a house cat.
The home wine maker may use any bottle, as the shape of the bottle does not affect the taste of the finished product. The sole exception is in producing sparkling wine, where thicker-walled bottles should be used to handle the excess pressure.
The traditional colours used for wine bottles are:
Bordeaux: dark green for reds, light green for dry whites, clear for sweet whites.
Burgundy and the Rhone: dark green.
Mosel and Alsace: dark to medium green, although some producers have traditionally used amber.
Rhine: amber, although some producers have traditionally used green.
Champagne: Usually dark to medium green. Rosé champagnes are usually a colorless or green.
Clear bottles have recently become popular with white wine producers in many countries, including Greece, Canada and New Zealand. Most red wine worldwide is still bottled in green glass.
Capsules

Sealing wax is sometimes used, or the capsule can be omitted entirely, since it is not needed with some modern stoppers. In the US, the FDA officially banned lead foil capsules on domestic and imported wine bottles as of 1996.
Punts

An empty wine bottle with a punt at its base.
A punt, also known as a kick-up, refers to the dimple at the bottom of a wine bottle. There is no consensus explanation for its purpose.

Some wine producers are exploring more alternative packagings such as plastic bottles and tetra packs, while other thrifty wine drinkers have found clever ways to reuse their wine bottles by making lamps, vases and candle holders out of them.

In 1999 Al realized his dream when he found and planted this wonderful site nestled in the Sonoma Coast Appellation at the intersection of Highways 37 and 121.

Following in the footsteps of his father who worked at Latour from the age of fourteen and was Cellar Master from 1969 to 1994, Denis took over as Cellar Master from 1994 to 2000.
In 1992 May-Britt Malbec won the award for Best Sommelier in the Nordic Countries, and has served on international sommelier judging panels.
Denis and May-Britt joined the Paradise View team in 2002.
